Grams to Ounces: A Simple Guide for Cooking and Baking
How to convert grams to ounces and back, the difference between weight ounces and fluid ounces, and a full reference table for common quantities.

One ounce is 28.3495 grams. This is the easiest conversion in cooking, because both units measure mass — so unlike almost everything else on this site, the ingredient makes no difference whatsoever.
The arithmetic
- Grams to ounces: divide by 28.35.
- Ounces to grams: multiply by 28.35.
- For mental maths: divide grams by 28, or multiply ounces by 28. Under 2% error, fine for cooking.

The trap: weight ounces vs fluid ounces
These are different units that share a name, and confusing them is the only real difficulty here.
- A weight ounce (oz) measures mass: 28.35 grams.
- A fluid ounce (fl oz) measures volume: 29.57 millilitres.
They produce similar numbers for water — 8 fl oz of water weighs about 8.3 oz — which is exactly why the confusion persists. For anything else they diverge sharply: 8 fl oz of honey weighs 12 oz, and 8 fl oz of flour weighs about 4.2 oz.
Where ounces still turn up
- US butter: sold in 4 oz sticks, 16 oz pounds.
- Chocolate: often sold in 4 oz, 8 oz or 12 oz bars and bags.
- Cream cheese: the US standard block is 8 oz (227 g).
- Canned goods: 14.5 oz and 15 oz cans are standard.
- Older British cookbooks: pre-metric recipes are entirely in ounces.
Troy ounces, briefly
If you ever see an ounce given as 31.1 grams, that is a troy ounce, used for precious metals. It has no place in a kitchen. Every cooking recipe means the avoirdupois ounce of 28.35 g.
Practical advice
Most digital kitchen scales switch between grams and ounces with one button. Rather than converting a recipe, switch the scale — it is faster and removes the arithmetic entirely.
Where a recipe mixes systems, standardise on grams. Grams are smaller, so they give finer resolution, and they avoid the fractional-ounce awkwardness that comes from working in sixteenths of a pound.
