How to Measure Ingredients Without a Kitchen Scale

Practical methods for hitting gram quantities using only spoons, cups and water displacement — plus which ingredients you can eyeball and which you cannot.

You have a recipe in grams and no scale. This is an extremely common situation and an entirely solvable one — you just need to know which ingredients tolerate volume measurement and which do not.

Start with what you have

A standard set of measuring spoons and cups covers most of it. The key figures:

Hitting an awkward number

Recipes rarely ask for exactly 100 g. For something like 175 g of sugar, build it from the pieces:

  1. 1 cup of sugar is 200 g — too much.
  2. ¾ cup is 150 g. That leaves 25 g.
  3. 25 g of sugar is 2 tablespoons.
  4. So 175 g = ¾ cup + 2 tablespoons.

This decomposition works for anything. Take the largest measure that fits, then fill the remainder with spoons.

The water displacement trick for fats

Butter, shortening and other solid fats are difficult to press into a cup without air pockets. Displacement is more accurate:

  1. You need ½ cup of butter. Fill a liquid measuring jug with cold water to the ½ cup line.
  2. Drop in butter pieces until the water reaches 1 cup.
  3. Pour off the water. You have exactly ½ cup of butter.

Cold water is essential — warm water softens the butter and it sticks to the jug.

Use the packaging

This is the most underused method in home baking. Packages state their net weight, so cutting proportionally is exact.

  • A 250 g butter block: half is 125 g, a quarter 62.5 g. Cut with a ruler if you want precision.
  • A 200 g bar of chocolate scored into 20 squares: each square is 10 g.
  • US butter sticks are printed with tablespoon markings. Cut at the mark.
  • A 100 g sachet of yeast or baking powder divides cleanly by eye into halves and quarters.

What you can eyeball, and what you cannot

Precision requirements vary enormously by ingredient, and knowing which is which saves a lot of anxiety.

Common household references

  • A level tablespoon is roughly the volume of your thumb from the tip to the first knuckle.
  • A teaspoon of salt is about what fits in a cupped fingertip.
  • A standard large egg is about 50 g out of the shell — useful when halving a recipe.
  • A standard mug is usually 250–350 ml, so not a reliable cup substitute.

And then buy a scale

All of the above works. But a digital kitchen scale costs about as much as two bags of good flour, takes up less drawer space than a set of measuring cups, and makes every one of these techniques unnecessary. It is the single best value purchase in a baking kitchen.
