What are the core baking conversions?

One US cup is 16 tablespoons or 48 teaspoons. One tablespoon is 3 teaspoons or ½ fluid ounce. One gallon is 256 tablespoons. For weight, one ounce is 28.35 grams. Volume conversions like these never depend on the ingredient — only weight-to-volume conversions do. That distinction is the one worth committing to memory. Cups, tablespoons, teaspoons, fluid ounces, pints and gallons all measure volume, so the ratios between them are fixed by definition and hold for water, flour and honey alike. The moment grams or ounces of weight enter, density decides the answer and the ingredient has to be named: one cup is always 16 tablespoons, but one cup is 200 g of sugar and only 120 g of flour. Note too that a fluid ounce measures volume while an ounce measures weight — unrelated units that happen to share a word.

This one does depend on the ingredient: 5 g is 1.2 tsp of sugar but 1 tsp of water.

Accuracy and assumptions

All volume conversions use US customary units unless explicitly labelled otherwise. Within that system the ratios are exact by definition, so there is no rounding error to accumulate.

The metric cup of 250 ml is used across Europe, Australia and New Zealand and is 5.7% larger than the US cup. Measuring-cup sets rarely state which standard they follow, so if yours came from outside the US, assume metric.

The Australian tablespoon of 20 ml is the largest single trap in this chart. It holds 4 teaspoons rather than 3, so any recipe converted with the wrong spoon will be off by a third on every spoon measurement.

Weight conversions between grams and ounces are exact: 1 oz = 28.349523125 g. Only the display is rounded.
