How to Build Your Own Custom Ingredient Conversion Chart
Measure the density of any ingredient in your own kitchen in five minutes, then build a chart more accurate than any published table.

Published conversion charts are averages. Your flour, stored in your kitchen at your humidity, has its own density — and if you bake the same things repeatedly, measuring it yourself gives you numbers more accurate than any table on the internet, including ours.
It takes about five minutes per ingredient and you only ever do it once.
What you need
- A digital kitchen scale that reads to 1 g.
- The measuring cup you actually use — not a different one.
- A notebook, or a note on your phone.
The method
- Put the empty measuring cup on the scale and tare it to zero.
- Fill the cup with your ingredient using the technique you always use — spoon and level, or scoop, whichever is your habit. Consistency with your own practice matters more than following someone else's.
- Read the weight. That is your grams-per-cup figure.
- Repeat twice more and take the average. Three readings will usually agree within a few grams; if they don't, your technique is the variable and that itself is worth knowing.
- Divide by 16 to get grams per tablespoon. Divide by 48 for grams per teaspoon.
A worked example
Measuring bread flour, spooned and levelled:

Round to 128 g per cup and 8 g per tablespoon. Write it down. You now have a value calibrated to your flour, your cup and your hands.

Which ingredients are worth measuring
Not all of them. Prioritise by two criteria: how variable the ingredient is, and how much of it you use.
- Definitely worth it: flours of every kind, brown sugar, cocoa powder, oats, desiccated coconut, ground nuts. All compressible, all variable.
- Worth it if you use a lot: granulated sugar, powdered sugar, breadcrumbs.
- Not worth it: water, milk, oil. Liquids have fixed densities that do not vary between kitchens.
- Pointless: butter, chocolate, anything sold by weight and cut to size.
Measure again when things change
Density is not permanent. Re-measure if you switch flour brands, move somewhere with a noticeably different climate, or replace your measuring cups. A humid summer can add a percent or two to flour's weight all by itself.
The honest conclusion
If you have a scale and you are willing to do this, you have essentially proven you no longer need volume measurement at all. Weigh the ingredient directly and skip the conversion.
The exception — and it is a real one — is recipe writing. If you publish recipes, giving both weights and volumes serves readers who have a scale and readers who do not. Measuring your own densities is how you make the volume figures trustworthy rather than copied.
