Cup to Grams Conversions for Flour: Why Measuring by Weight Is More Accurate
A cup of flour can weigh anywhere from 100 g to 145 g depending on how you fill it. Here's why, and how to measure flour so your baking is repeatable.

A cup of all-purpose flour weighs 120 grams. It also weighs 145 grams. Both are true, and which one you get depends entirely on how you put the flour into the cup.
That 25-gram spread is around 20%, and it is the single largest source of unrepeatable results in home baking. Here is what causes it and how to eliminate it.
Flour compresses, and that changes everything
Flour is made of particles small and irregular enough that a large fraction of any given volume is air. Unlike sugar crystals, those particles rearrange under pressure — so anything that presses flour down increases how much fits in a cup.
Three things routinely press it down: settling in the bag during shipping and storage, tapping or shaking the cup to level it, and — the big one — dipping the cup into the bag to fill it.

Why scooping is the worst habit
Dipping a measuring cup into the flour bag feels efficient, and it is how most people were taught. But the cup acts as a scoop: it compacts flour ahead of its rim as it goes in, and you end up with a cup that has been packed rather than filled.
On a recipe calling for three cups, scooping instead of spooning adds around 60 grams of flour — half a cup's worth of extra flour you never intended to add. The result is dry, dense, and tastes like less butter than you actually used.

Not all flours weigh the same
Different flours are milled to different fineness and have different protein content, which changes how they pack.

Swapping bread flour for cake flour by volume changes the flour weight by more than 10% — on top of whatever the protein difference does to your gluten structure.
Sifting: before or after?
The wording in a recipe is load-bearing here, and it is easy to misread.
- "1 cup sifted flour" means sift first, then measure. You get about 100 g.
- "1 cup flour, sifted" means measure first, then sift. You get 120 g.
A 20% difference hinges on comma placement, which is a good argument for weight-based recipes on its own.
Why a scale solves all of this
A digital kitchen scale costs less than a decent cake tin and removes every variable above. Set your bowl on it, tare to zero, and add flour until it reads 120 g. No technique, no settling, no ambiguity about sifting order.
It is also faster. Weighing three ingredients into one bowl takes less time than measuring three cups, and leaves nothing to wash.
If you do not have one, spoon and level, and be consistent about it. Consistency matters more than which value you use — a recipe you can reproduce is worth more than one that is theoretically correct once.
