Grams to Tablespoons: Why It Depends on the Ingredient
A tablespoon is not 15 grams. Why grams-to-tablespoons has no single answer, what density means in a kitchen, and the numbers per ingredient.

Search for a grams-to-tablespoons conversion and you will be told, confidently and almost universally, that one tablespoon is 15 grams. That figure is correct for exactly one substance: water. For everything you are likely to be measuring in a kitchen, it is wrong — and for cocoa powder it is wrong by a factor of nearly three.
This is not a rounding quibble. It is the difference between a cake that rises and one that does not. Here is why the conversion has no single answer, and what to use instead.
Weight and volume are different questions
A gram measures mass — how much matter is present. A tablespoon measures volume — how much space something occupies. These are not two ways of describing the same thing, and no fixed number converts between them.
The bridge between them is density: mass per unit of volume. Once you know an ingredient's density, the conversion is arithmetic. Without it, you are guessing.
How much does this actually vary?
More than most people expect. A single US tablespoon holds 14.79 millilitres of space. What that space weighs depends entirely on what fills it:

Cocoa powder at one end, honey at the other: 5.31 g against 21.25 g. The same spoon, four times the weight. Applying a generic 15 g to either would be a serious error.
Why some ingredients are so light
It comes down to how much air the ingredient traps. Cocoa powder and flour are made of tiny irregular particles that cannot pack tightly — a spoonful is substantially air by volume. Sugar crystals are larger and more regular, so they nest together with less empty space. Butter is solid with essentially no air at all, and honey is a dense liquid with none.
This also explains why the same ingredient can vary. Flour that has settled in the bag for three months is denser than flour just milled. Sifting deliberately adds air and drops the weight per cup by up to 20%.
The three numbers worth memorising
- Granulated sugar: 12.5 g per tablespoon, 200 g per cup. So 100 g of sugar is 8 tablespoons, or exactly half a cup.
- All-purpose flour: 7.5 g per tablespoon, 120 g per cup. Roughly 60% of sugar's weight for the same volume.
- Butter: 14.19 g per tablespoon, 227 g per cup. One US stick is 8 tablespoons or 113 g.
Those three cover the overwhelming majority of baking. Everything else you can look up.
Level, always
Every figure above assumes a level spoon: fill it, then scrape the top flat with the back of a knife. A heaped tablespoon holds roughly one and a half to two times as much, and the exact multiple depends on the ingredient and on how steady your hand is. There is no reliable conversion for a heaped spoon, which is why recipes that say "heaped" are giving you permission to be imprecise rather than an instruction to be exact.
So what should you actually do?
If you have a scale, use it. Weighing is faster than washing four measuring cups and removes the entire problem. Most modern recipes from serious sources give weights precisely because volume is unreliable.
If you do not have a scale — and most kitchens do not — then use a converter that asks which ingredient you are measuring. That question is not a nicety. It is the whole calculation.
